I cannot speak for mounted phals as I cannot grow them successfully in my region. (I would LOVE to!!) Healthy roots are white and firm. New roots can be green and later develop into the big fat white ones we hope for. Brown and mushy is never a good sign and indicates that part of the root is dying. It doesn't always mean your entire root will die.
I am sure someone with direct experience with mounted phals on the east coast can help you more precisely, but these are the basic rules!
