when I had my greenhouse in charlotte, and it had 4 vents in the roof, even with them open the heat build-up is extraordinary even with fans. I did not have a cooling system.
What I did was move the plants outside in the summer, and used the greenhouse for fall and winter.
For example, even on a winter day, when the outside temps were in the 50s, the greenhouse, with fans and 4 roof vents would easily get mid to high 80s if it was a bright sunny day. During the summer, with vents open and door wide open it was unbearable in there.
If you are planning on using it just for summer (which I assume since you are not building down to the ground), what about the same structure, but using shadecloth as your walls. Would keep the dogs out and help a little bit with containing them.
You could also use different kinds of shadecloth, allowing for different light intensities inside.
