my dends and I are a little confused

So I have a couple of dendrobium seedlings a hercoglossum and a bracteosum var. album. I have read that for the winter months I should reduce watering and stop fertilizing all together. The only thing is they have just started over the past month shooting out new growths that to my understanding usually happens in the spring. I am confused to whether I should force them in to dormancy by restricting water or should I wait for them to decide on their own. I do grow them under lights year round, not sure if that is a factor or not.
Any insight would be appreciated.

How old are the seedlings? I never let a first year old seedling have a dormancy. The dormancy of less water, but more light, is for the blooms. Is the herco big enough to bloom?

The bracteosum does not need a dry period - it should be watered year round.

Hi Brooke,
I'm not sure how old the seedlings are but the grower said they would be a couple years from blooming. So maybe I'll wait till the hercolglossum is more mature before letting it go dormant.
