I would not be alarmed, as any new growths are good growths!

If they're growing I'd assume they're happy. There are no leaves on the old growths, which is normal for these plants. Are the new growths really coming out the side of the old pseudobulbs, or is there a skinny rhizome coming up from the base? Either way, I wouldn't be concerned, though. I've found these plants to be fairly bulletproof during the growing season; the only easy way to kill them is to keep watering when they drop their leaves |

I'm with the others... it's safe to assume if the plants are growing new plantlet, then they're happy with their conditions! With a bit of time, the new roots will grow into the sphagnum. This will both nourish the new plants and help stabilize them. Good growing!

well, i had no experience with cynoches but i had grown several catasetums seedling before and they look similar to that, excellent plants you had there. but usually i prefer a layer of broken bricks plus charcoal (polystyrene nuggets as alternative) to increase as base layer to improve drainage and lesser amount of shagnum. IMHO or at least my own experience, too thick layer of moss creates quite some problem for me.
