I've got two vandas (my first ever, so I'm by no means an expert), and I was told to submerge them in a bucket of water for about half an hour every day, and to add some fertilizer to the water once a week. They seem quite happy like that, they are both growing leaves, and one of them has grown three new roots.

Not really, I put the hose nozzle on "shower" setting and spray all the roots on all of my Vandas (about 12) in the morning, until they turn green.

They are literally dripping wet which helps them, plus the humidity in the GH, as I have the roots wrapped in Grand Fathers' Beard to also help keep the humidity around the roots.

I then repeat after work, but without wetting the leaves and that keeps the roots damp overnight. My GH is heated at night, so the roots don't get too cold or rot from being wet.

Watering them until the roots turn green is the key. If the roots don't turn green after a few minutes, you will want to soak the roots until they do turn green.

If they feel hollow when you squeeze them, they are dead and you can probably just pull them off.
