Cool To cut or Not to cut

I'm not sure what to do about my old phal spikes.

Backstory
1. Has 4 large leaves, all over 1 foot long.
2. Has 2 old spikes from last year. 1 spike still has one flower attached, the other spike just dropped its last flower. Both spikes grew a few more flowers a couple weeks after it finished blooming (like a second bloom after a short stall). Both spikes are still green.
3. Lots of good plump healthy roots visible at the media level.

Current situation
1. Has a new spike that is 6 inches tall and growing
2. Still growing baby roots
3. Don't see anymore new leaf growing

What do I do with the old spikes?
1. Do I cut off the old spike without the flower? Where do I cut it?
2. What about the old spike with the one remaining flower? Do I cut it too? Where do I cut it?
3. Will the 2 old spikes continue to re-bloom as it previously did once before?
4. What is the possibility of a keiki?
5. Is it too late to try to get the phal to grow a second new spike?

Sorry for all the questions, but this is my first time getting any orchid to reflower and my very first orchid to survive.

You have a lot of options! It is really up to you to decide what you want your plant to look like and to some degree do - some of it is merely aesthetics - what you want your plant to "look" like. Some people choose to leave their old spikes on the plant until they turn brown. Trim back to just above the last node and wait and see what happens. Either a secondary spike will shoot out with additional flowers, a keiki may form (cutting just above lower nodes may be better for encouraging a keiki), or the spike will turn brown. A combination of genetics and how "happy" your phal is will determine what happens. Many people choose to cut the old spikes off at the base as soon as they are done flowering to encourage the plant to build up its energy for a larger spike during the next round and put its energy into leaves and roots. On the other hand I have seen very mature phals with 6-7 spikes growing at once and 3-4 old ones besides and they seem to be going/growing like nobody's business.
