Nobile types are decidious- they require a cool period, decreased watering, and their leaves drop. Dendrobium phalaenopsis are native to Australia and require no real dormancy, except for cutting back on watering after the canes are mature but before flower spikes show.

These two types are the common types available in big box stores. Hybridizing aims at making these ever more desirable and easy to grow for the newbie. But, there certainly are more than just these two types. There are over a thousand different Dendrobium species, each with its own set of needs. I have over 3 dozen different Den species and many, if not most, have requirements different than either of the common types.

In nature, many dens are subject to monsoons, and many are not. If they are monsoonal, they experience five or more months of dry, cold, sunny weather and hot, wet, sunny summers. If they are not, they experience regular moisture and warmer weather year round. The difference in care are poles apart, so it's important to know what type you have.
