Repotting Cymbidium

All the flowers are gone and I'm in the process of re-potting my Cymbidium. I had to cut it out of the pot. There was very little mix left and I was not able to loosen up the roots very much it was so root bound. It was in a 7" plastic pot and I see I will need a 12" pot after I add a little bit of "peanuts" and potting mix to the bottom before setting it in. My 2 questions are, should I now cut off the spent bloom stalks? lf so, how far down should I cut them. Also, should the plant stay level with the top of the pot or a little above?
