I haven't made any yet, but there were a bunch of good looking recipes on Cooks.com

They even had some for the microwave that didn't require a candy thermometer!

Okay I found that rather fast...lol. I am going to give you two recipes. One is for Fudge and one is for one of my absolute all time favorites made with Oatmeal.

#1 Fudge
Makes 36 pieces
Use an 8-inch square dish

1 stick butter (1/2 cup)
1 pound powdered sugar, sifted
1/2 cup cocoa
1/4 cup milk
1 teaspoon vanilla
1/2 cup chopped nuts (optional)

1. Put the butter in a large bowl and microwave on HIGH 1 minute or until melted.

2. Add sugar, cocoa, milk, and vanilla. Stir until well blended and smooth. Stir in nuts (optional).

3. Press into an 8-inch square dish and refrigerate until firm. Cut into squares and enjoy!

Rocky Road Fudge: Make #1 Fudge and stir in 1 cup of minature marshmallows instead of nuts.

And for Friendship Cookies here is another recipe you might like...its quick, easy and delicious!

Friendship Cookies
Makes 2-3 dozen
Use a 2-quart bowl

1 & 1/3 cup of sugar
1/3 cup cocoa
1 stick butter (1/2 cup), melted
1/2 cup milk
3 cups QUICK cooking oatmeal (it has to be quick cooking or this recipe doesn't work)
1 teaspoon vanilla
1/2 cup nuts (optional, I usually leave out the nuts)

1. Combine sugar and cocoa; stir until very smooth. Add butter and milk. Microwave on HIGH for 4-5 minutes or to a full rolling boil.

2. Stir in oatmeal, vanilla and nuts. Microwave on HIGH 1 minute. Drop by teaspoonfuls onto a sheeet of wax paper. Chill until set.

I personally like it even when its still hot...lol!

HTH

I have an easy PB fudge recipe too:

2 Cups sugar
6 oz evaporated milk
dash salt
1 tsp light corn syrup

Use 2 qt. saucepan. Butter sides. Add ingredients.
Bring to a boil. Cook to soft ball stage (236 degrees F). Take off the burner.

Add 1/2 Cup peanut butter, 1 tsp vanilla, 2 Tbsp butter.

Let it cool. When fudge begins to lose shine and stiffen, pour into an 8 x 8 dish or round pie pan and let harden. Score before the fudge is completely cooled.

This recipe doubles really easily too!

P.S. I have a very similar recipe to Shann's Friendship cookies, only we call them no bake cookies. They're delicious too!

I have one that I have been making since my kids were in school and it has always been a favorite and one of the things I'm always asked to bring to parties etc. Very easy, but looks like you have some others who have given you their recipes. So if you'd still like another, let me know.

I make fudge every year too, both chocolate and peanut butter. It's fun to layer it, a layer of chocolate fudge then a layer of pb fudge. Yummmmy.

One other thing that is fun with fudge, use pretzel sticks to dip into the fudge while it's still warm, and get a big glob on the end of the pretzel stick. You have to work fast before the fudge hardens, but you end up with "fudgcicles" The peanut butter fudge on the pretzel stick is really really good. Then if you want after it hardens, you can dip it quickly in melted chocolate and you get basically a Buckeye on a stick.

The only chocolate fudge recipe I use is the Never Fail Chocolate Fudge recipe on the back of the marshmallow fluff jar.

Kahlua Fudge

1 1/3 c. sugar
1 jar (7 oz.) marshmallow cream
2/3 c. evaporated milk
1/4 c. butter
1/4 c. Kahlua
2 c. semi-sweet chocolate chips
1 c. milk chocolate chips
1 tsp. vanilla

Line 8-inch square baking pan with foil. In 2-quart saucepan, combine sugar, marshmallow cream, evaporated milk, butter and Kahlua. Bring to a rapid boil, stirring constantly for 5 minutes. Remove from heat; add all the chocolate chips, stirring until melted. Stir in vanilla. Turn into prepared pan, and refridgerate until firm. When set, turn onto cutting board, peeling away the foil. Cut into portions as desired. Makes about 2 3/4 pounds of fudge.

Enjoy!

I always use the one on the back of the marshmallow fluff jar, too! I always make two batches, one with peanut butter chips, the other with the chocolate, and layer them.

Your going to laugh at me, or think Im totally nuts, but after I tried it and tasted it, I swear by it!!!! Beyond simple fudge recipe.....

1 can of vanilla cake frosting(for peanut butter fudge), or if you want choc. then use chocolate frosting
2 heaping large spoons full of peanut butter.

Put both ingredients in a microwavable bowl, and heat for 3 minutes. Do not stir!!!

When it is done cooking, stir the mixture together until mixed well, put in a square container then into the fridge for 1 hour. After the hour, take it out and cut into squares. It absolutely tastes great. I jokingly call it the ghetto fabulous fudge, but it is so good, you wouldnt think it. Seriously though after you have tried it, you have to let me know what you think. I love that I can make PB fudge with little effort on short notice, esp. since I have a school aged kid now. If you like nuts in your fudge, you can add them in after you have cooked it and stir it into the mix, but we like our fudge without nuts. (we are nutty enough ha ha ha)

Hi Jenny, I was wondering about that as well. If so I can see why this cake would be time consuming to make. All of the recipes look so delish! Why oh why did I click on this thread now I want fudge so bad!! Well since all of you guys have the cooking part covered guess I'll have to do my share and show up and help you eat some of that yummy fudge! What time did you all say you were serving desert?

Actually I found my favorite recipe which is 3 minute fudge. Made a double batch of that and then I HAD to try the velveeta fudge. It's not at all cheesy. I have every intention of trying some of the other recipes that were posted though. Spent the morning making a double batch of sugar cookies and a double batch of peanut butter blossoms today.
