There are a bunch of orchids that have a scent. You just have to find them!
As for the black spider like critters eating your Cym, I don't know what that would be. It could be mites or aphids. Can you get a picture of them? Try this on them and see if it works.

As for the mossy looking stuff growing on the surface of the medium, I don't think that it will harm the plant, but if it grosses you out I'd go ahead and remove it. Makes the plant look cleaner anyways.
Now for the Paph. Paphs like to be kept moist, not soppy. Never let the medium completely dry out on a Paph. This can damage the hairs on the roots and overall cause roots to be destroyed. I suggest moving the Paph to an area with a little more light and where it can get ample air circulation. Make sure that the medium stays moist. This should help. Here is the
