Hey Clare!

You have me beat, I'm in Anchorage. We have a few geeks from Canada though I'm not sure how far north they are. I've found a few great orchids in Safeway, though you have to be careful at times selecting them as they don't typically care for them very well. If they still have plastic wrapped around the pot, I would remove it. Except for a few orchids which need to stay the wet side, I water most of my potted orchids once a week or when they're completely dry. I can't offer a lot of specific advice with Dedrobiums or Oncidiums as I only have a few, but I know a lot of orchids coming from Safeway are potted in material that they use in Hawaii. I find what they typically came in dried out too quickly for me. I know living in Fairbanks you're exposed to highs in the 90's and very low lows, lol. They should be fine for now, but be careful not to let them fry in front of the windows as temperatures warm up. A few things I would suggest researching on this site are lighting, watering, and potting materials. Keep in mind that different things work for different people. A lot has to do with geographic location.
