Here is a good site that can give you basic culture information for your types of orchid. AOS | Home

It may be that your orchids are not getting enough light for blooming. Phal spikes are supposed to dry up after the blooms die off, so you didn't do anything wrong. A little more information on where you grow your plants, i.e. windowsill, outdoors, southern exposure versus northern type iof nformation will help us help you.
