I think they look well mounted. You need a bit of something to hold some moisture around the roots so you don't have to water the mount 2-3 times a day and the sphag works well for that. You've anchored the plant in place which is necessary until it grows new roots. Just be sure the plant is not wobbly on the mount. I' think you've done well.

Watering for mounted plants is different than for potted ones. Usually mounted orchids need to be watered more. Watch your plants carefully for the next few months and see how they're responding.
