Sara, Just a note on the names: the names of your orchids are:

Dendrobium Iki, and
Otaara Hidden Gold

These names don't appear in single quotation marks. Only cultivar names appear in single quotes.

Otaara is the genus on your second orchid. Its a Cattleya hybrid but not a straight Cattleya so no need to put "Cattleya" before the name.

Regarding the medium you use: it depends on a few things: 1) how dry or moist the plant likes to be, 2) how often you like to water, 3) your growting conditions, how warm, how humid, how much air circulation.

Given my habits and conditions I personally would not use fine medium for either of these guys. I'd use medium bark, medium perelite, and medium charcoal.
