If they have been indoors during opening and presentation, I doubt they have been pollinated.

Look at the tip of the column. Is the anther cap still in place? Cattleyas tend not to be cleistogamous (self pollinating), so some "outside force" would have to have played a role, and that would have required removal of the anther cap to get to the pollinia.
