I would just leave the rest of the flower spike for now as it might still give you either more flowers or it may give you a Keiki ( new growth )
It the rest of the flower spike starts to turn brown then cut the spike off about an inch above the base of the spike.

with the right care your Phal will give you more flower spikes in around 8 to 12 months time.
