As fred said it may be possible that it will survive. Since you said 'stem' is broken off, I assume it is a Dendrobium.

Since you have part of the new stem still intact it could grow again.

I am sure you will get more advice from other members soon.

I would not water it right now. But please wait for some experienced members to rule on that. I am sure the wait wouldn't be that long to get their input.
