That looks like a Phalaenopsis. It also looks like it is in too big a pot. Is this the pot it came in? Has it shrunk since you got it? The picture is so small, it is difficult to see if the plant is really healthy or not, but it looks a little small. Maybe it is just the large pot that makes it look small. So, can't say one way or another if the old spike needs to be removed because the plant needs the resouces to grow or not. Generally, if the plant is healthy, it is your call as to whether you want the plant to have large and more flowers next winter, or whether you would rather have more, but smaller flowers now, if the plant is willing.
