It sounds like you have Pahalaenopsis. You can tell by the big wide leaves growing off a center stem.

These new growths are most probably roots this time of year. They bloom once a year after a chill sets the flowers (nights 20 degrees colder than day temps)

It sounds like you are doing everything well so with what is working.
