My guys do fine with a 10-10-10 whenever I remember (rarely). Dends do like nitrogen, it's just that, at the wrong times, it'll cause green growth rather than flowers.

I visited Yamamoto Dendrobiums when I was in Hawaii, they even feed their nobiles (notorious keiki throwers if fed nitrogen before blooming season) nitrogen...just when they're supposed to be growing. Most dend phal types won't care unless you're giving them a super nitrogen loaded fertilizer.
